A humble block of tofu, a handful of minced beef, a spoonful of fermented chili bean paste and a shower of Sichuan pepper — mapo tofu is the dish that made Chengdu famous from Paris to Tokyo.

#2 Mapo Tofu, the World-Famous Silken Tofu

Mapo tofu (麻婆豆腐, mápó dòufu) is the most internationally recognized Sichuan dish on earth, yet it still tastes best a few steps from where it was invented. The name literally means "pockmarked grandmother tofu," after a Qing dynasty restaurateur named Chen Senfu, whose face was marked by smallpox. Her tiny inn, opened around 1862 near Wanfu Bridge outside the north gate of old Chengdu, served boatmen and porters who paid with their own dried beans and oil. She turned those ingredients into a silky, fiery, numbing masterpiece that has outlived empires.

What makes it authentic

Real mapo tofu follows the seven Sichuan ideals: ma (numbing), la (spicy), tang (piping hot), xian (umami), nen (silky), su (crisp from the beef) and xiang (aromatic). Soft silken tofu is cut into small squares and gently simmered, never stirred violently, in a sauce built from fermented broad-bean chili paste (豆瓣酱, dòubànjiàng), chili powder, garlic, ginger and minced beef. The dish arrives bubbling in a shallow clay bowl, glossy with red oil, crowned with scallions and a final dusting of freshly ground Sichuan pepper. It must be eaten immediately, while the bowl still scalds your fingers.

Ordering and pairing

Order one plate of mapo tofu per person, plus a bowl of steamed rice (米饭, mǐfàn) to soak up the sauce. A cold vegetable such as garlic greens (蒜蓉油菜) balances the fire. If you see Chen Mapo Tofu (陈麻婆豆腐) on the menu, this is the original brand; other neighborhood restaurants also serve a solid version. Watch out for tourist versions in Shanghai or Tokyo, which often remove the numbing pepper — that is not the real thing.

  • Transport: Metro Line 1/4 to Luomashi, then a 10-minute walk; or Line 4 to Kuanzhaixiangzi.
  • Opening Hours: around 11:00–21:00 daily.
  • Cost: a plate is ¥38–68; a full lunch with rice and one vegetable costs ¥60–90 per person.
  • Tips: tell the server sha shao málà ("less numbing and spicy") if you want a milder version. Eat with a spoon, not chopsticks.

Foreign diner tips

Mapo tofu is one of the safest Sichuan dishes for beginners: the heat is aromatic rather than sharp, and the tofu itself is soft and mild. Do not mistake the red color for overwhelming chili — most of the oil can be left behind. If your lips tingle, smile; that is the famous sensation locals pay for. Ask for rice on the side: "yī wǎn mǐfàn, xièxiè" (one bowl of rice, thank you).

Pairings, Drinks and Table Etiquette

Chengdu meals almost always begin with tea. A pot of strong green tea (绿茶, lǜchá) or jasmine tea (茉莉花茶, mòlìhuāchá) clears the palate between spicy bites. Locals also order cold Yanjing beer (燕京啤酒, Yānjīng píjiǔ) or sugarcane juice (甘蔗汁, gānzhezhī) to round out the heat. When the bill arrives, watch how locals pay: the person who organized the meal usually insists, and gentle pushing of the receipt back and forth is part of the ritual, not a quarrel. If you are a guest, let your host pay; if you invited, claim the bill with a smile. Always wipe your chopsticks on the hot towel (热手巾, rè shǒujīn) before eating, and never plant chopsticks upright in the rice bowl—it resembles incense offered to the dead. If a dish is too spicy, do not reach for water; ask for the free iced sour-plum drink (酸梅汤, suānméitāng) or a bowl of plain rice. Chengdu is informal by Chinese standards: slurping, loud chatter and second helpings are all signs of a happy table.
